Hey Wayne thanks for the advice in the sausage. I used the big die wheel to grind the meat this time and wow what I difference. I also left out the salt until I am ready to stuff the casings. I am trying Cheese & Parsley this time. Smells real good so far.

    I'd like to hear about the cheese & parsley after the taste test. I put fresh in my southwest chicken sausage and it's a nice touch.
