Got some ribs on - Question. . .

I got some ribs on, and was following the 3-1-1.5 recipe in one of the cookbooks off Whiz's site. Problem is,they've only been on for 1. I don't want to eat at 9. Any way to salvage this one so I can eat at 7-7:30?? I'm at 250 grid temp right now.

I am assuming you began at 3:30 so I would reduce the cooking time by 1 hour on the back end by 15 minutes the second hour and the last by 45 to 60 minutes.

Sorry I'm such a n00b. . . I started at 3:30. So you're saying at 5:30, put them in foil for an hour, same temp, and then put them back on unfoiled for 30 mins. . . Do I go to a higher temp?

sorry it took so long to get back. You probably have eaten them by now. When I run into this problem I just usually shorten up the back end of each phase. I would have taken them off closer to six and then reduced the phases accordingly. I use the last half hour to add the BBQ sauce/glaze.
I might try and raise the emp but never above 300
