Beer Batter Tilapi & Onion Rings

I've really come to love tilapia and last night I combined it with onion rings. Although this picture probably won't make the cover of Fine Cooking, I'm posting it anyway. After I let the batter sit too long, the beer & club soda lost a good bit of zest and while the fish was OK, the onion rings could have been better. And yet, it was all mighty tasty. It wasn't cooked on the Egg but very well could have with a CI skillet.
