I was wondering if I could get some feed back on how long and at what temperature to cook spare ribs on the BGE? Thanks.

This is for spare ribs: pull the membrane and coat with favorite rub

cook 2 hours indirect at 300 degrees

pull off the grill and double wrap in aluminum foil

cover the ribs in brown sugar and 1/2 cup melted butter

put back on the grill for 1-1 1/2 hours indirect at 300 degrees

perform the accordion test by picking up both ends of the foil and seeing if the ribs bend easily in the middle (use gloves to do test)

if they do bend unwrap them and put back on the grill for 10-15 miutes basting liberallly with your favorite sauce...if they do not bend leave them on unwrapped for 15-30 minutes longer and then baste

take off the grill and eat...these will amaze your friends and family...
  • Last ones I cooked were 3 hours on an indirect setup at 250 dome temps then foil for 2 more hours...delicious! The bend test is an eggcellent way to tell how ribs are doing.

There are all sorts of variations, but generally they're cooked for about 5 hours or so at 250* indirect. Some foil, some don't.

Highflyer...did a rack of spares this past weekend just like vidalia1 suggested. But I foiled the ribs in apple juice, meat side down and they turned out great. Used a KC style sauce that I got from my Weber cook book.Like jeffersonian said there are all sorts of variations. Practice-practice-practice.
