beer for traditional chocolate-based mole

i'm reading the brewmaster's table, published by brooklyn brewmaster garrett oliver (also an accomplished chef) and in the book he recommended a style of beer that marries the mole wonderfully.

he recommend dry kriek or framboise.

just thought i'd pass this along since there has been discussion of this dish.

Thanks Jason, I just couldn't resist. I don't know if I would even know where to find beer like that around here. And I remember that you already cleaned out your pantry...to help your wife, of course.Haha. I'm hoping to expand my horizons as far as beer goes, but there are so many new ones out there now,...where to start?

that lambic tastes like banana split, especially if on draft. this one would be good too

unibroue has some fine offerings. i have never been disappointed with any of their offerings.

is their kreik lambic a dry lambic or a sweet one?

i would say it was sweet cherry flavered, dont know if it would be considered a lambic but it was truly a desert beer

according to mr. oliver, it should be a dry lambic versus a sweet one.

not saying it wouldn't pair nicely, just pointing out the difference.
