persimmon chix and death pepper salad

2 kosher birds

with 3 chunks of persimmon wood indirect. chicken was the best ever.. moist... perfect smoke .... and nothing but meat and smoke no rubs no herbs. no bitter smoke and the younger bottomless pit liked it too.


1/3 arkansas death pepper

mixed with tomato, basil, mozzerella, evoo,sea salt and pepper... i AM a wuss and still sweating .

i bought some chuck eyes today to try it on...

Hey bill, I don't have access to any death peppers, would like to try one though, this is as close as I come, it made an appearance in my morning fritatta, the wife & I were sweat'n a little:happy in the hut

Them yard birds do look great. Glad you liked the wood. How did the boys like the salid? 1/4 of one of those "death peppers" miced in the salid like you did should have been about right for you "virgins"! :laugh: BTW They are called Carribian Reds. Simmular to Habenero peppers but susposed to be hotter but once you reach a certain point who can tell!
Got two to eat with the fried yard bird hear in a bit. Had one earler. :P

it was the wood... jl posted some spatched w/ persimmon that looked that way and that is what i was aiming for .. they were great.. i was busy doing other things and they went over temp but they were so moist ..see the juice on the platter! i comtemplated eating jut the skin off both off them and letting the bottomless pit have the meat.

boys don't do hot stuff except wasabi. you are going to eat three in one day???? must be the chemicals from the poison plant causing you to mutate like the hulk ..or i am really really a wuss

I also received the same package from Easy RiderI'd like to try the persimmon on some cooks. What would you compare the smoke flavor to?
The death peppers are great, aren't they? JL said not to let them touch your lips, else you'd be in some big trouble -
smoke was not as strong as hickory with a slighly sweet taste.not over powering at all i used 3 chucks for the birds. was great on the chicken
