Riso stuffed peppers & chicken

I was trying to come up with a no-meat stuffing for a couple bell peppers to serve with, well, the meat. Looking through the cabinet for rice I came upon a box of riso :blink: , plucked a few leaves from the trusty parsley plant, mixed in some shredded chedder cheese, olive oil, salt & pepper, stuffed'm, a shake of bread crumbs & a little butter, stacked'm atop some chicken thighs & went at 300 for 60 minutes before saucing the thighs, it was yummy:
