What kind of wood for "brick oven" taste?

I'm thinking of trying a pasta dish like at Macaroni Grill that gets backed for a second in their brick oven before it hits the table. Any idea what kind of wood they use in their brick oven? Or what kind of wood works for pizzas to get the brick oven taste?

Most Brick ovens here in the northeast use oak but that could be a regional thing. I don't think you could go wrong with oak IMHO

Our local Macoroni Grill has a pile of wood on the side of the building.You could just give them a call and ask what they use.
