How to cook a small chuch roast

I thawed a small 2lb chuck roast about 2' thick last night with the idea of doing a lo 'n slo this weekend. Is this roast too small to do it that way? I was thinking 225*-250* but am entirely unsure how long. Will probably rub with coarse Dizzy Dust and mustard tonight and let set over night or until Sunday. It has too much fat to turbo it.

Steve-O, not too small but at two pounds will not take too long. Figure about 2-2.25 hours/pound at 225-240. Would be interested in how well it cooks low and slow. You might want to cover the top with a little bacon if there is no fat cap of any kind.

Thank you for your reply. I will shoot for that and see what happens. This piece of meat is very "marbled" with fat, so don't think I need the bacon for moisture, though I might use it for additional flavor.
