A speedy butt?
Harry
Posts: 58
I put a 5+ pound butt on about four hours ago. Dome temperature crept up to about 230. In just four hours temperature at 159. I've never had one go that fast before.[p]Getting ready to hit the hay pretty soon. I know to expect a fairly long dwell in the 160s, but this one is going pretty fast. Anybody have a similar experience? Not sure what to do except watch it and then take it off when it hits 200. Just don't want it to be tough.[p]Harry

Harry,[p]Make sure the dome thermo tip isn't touching the meat or you could be cooking it at 350° and not know it. Make sure your meat thermo is not touching bone or it reads high.[p]Enjoy[p]Tim
