Just getting ready to put the butt on for tomorrow afternoon's meal. I'm wondering if it's better to put the fat cap to the top while cooking or on the bottom?[p]Thanks,

On top is choice of most; fat 'melts' thru the rest of the roast, kinda self-basting that way.
