Jerky -- Indirect or Direct?

Hey all,[p]How does everyone do their jerky? Should I use the plate setter to do it?[p]I find it easier to maintain temps below 200 for some reason with the extra mass though... [p]James

James,[p]Do it indirect. I use an inverted plate setter and then have a setup that will hold three levels of jerky. If I can dig up the photo later I'll send it to you. I too am doing jerky this weekend, good luck with you cook.[p]Chuck <><[p]

Indirect method. I am trying some thicker strips cut from a london broil this weekend.
