need carry-in suggestions

I'm looking for something I can cook Wednesday evening and then serve Thursday noonish for a departmental carry-in. Last time we did this, I took the morning off and brought in a stuffed pork loin (half) fresh off the egg.

I'd do pulled pork, but someone else has signed up for that.

My reheat options are microwave or crock pot, or reheat in the morning and pack in the cooler with a couple of hot wrapped bricks.

Maybe do the pork loin again, then reheat in the crock pot.

Other suggestions?

    Now there's a thought -- They'll reheat just fine in the microwave, and we can snack on 'em after lunch -- and the local grocery chain is running Bob Evans at two for $4.00.
