I'm trying my first low and slow pork butt. Put it on last night just before midnight, with temperature stable at 250.
I just got out of bed and the dome was at 190 or so, meat at 150. So no problem, right? I adjusted the vents to get the dome back to 250. Smells great
Unfortunately, I think our dinner guests may not be arriving. There was an explosion at a propane storage facility nearby, and most of the roads are closed.

Where do you live? Hopefully there are no injuries

We're in Toronto. The news reports say there were some minor injuries only, but they evacuated a large area due to risk of further explosions.

Sounds like you have things going well for your first Butt. As long as the meat temp is at least 140 you should be good.
I hope no one was hurt to bad in the explosion.
Let us know how the Butt turns out.

I'm in the same shape. First cook of anything for me.
Pork but on at 12:15, 250, checked at 3am and 530am, down to 180 at 8 am. Had to relight fire. back up to 250 now.
Good luck!! It smells great if you stand in the right place to get the smoke, doesn't it?
I wasn't bold enought to invite anyone for dinner, but I told some friends they may get an emergency call to come over for pulled pork. I'm gonna try to get some egg converts. -
I was braver, we have three or four people coming to try it.
3pm now, internal temperature at 187F.
We opened all the windows to get the smoke smell into the house.
I did a simple rub and made some sauces from one of Raichlen's cookbooks. The mustard sauce tastes great, can't wait to try it. -
Ok, thankful for that
