I donno, nothin beats indirect for baby backs IMO. 250 is right on there, but indirect.

You've got to try Car Wash Mike's 3-1-1 method posted on thirdeye's site.
Click here for the instructions... -
Not sure if this is the same method or a version of it. It appears DaveKatz likes the direct method.

Mike,I understand that you have a xl and love it.I've been looking at the xl also for the past year and been observing this forum also.(very informative) I learned a lot already, and don"t own one yet. There"s seven of us and although a lrg. might do I think i would like having the space than not having it.I"m not to much concerned about the xtra lump I just like the space of it.I do respect the opinions of everyone,I just don"t know why it"s so spoken against.I have an xl on layaway but i"m still tossed. From Sumter,sc.

I have both and XL and a Large OK 1 XL, 3 larges and 2 smalls..
For the money and just 7 people the large is much better of a deal. My XL gets used when I cater. I regularly feed 20+ people on my large. My small gets used when I want Q for me or me and my wife.
For what you pay for the XL you can get a Large and a Small. -
Which ever size you get you won't be disappointed. I really like the extra real estate of the XL. Although there is something to be said about having two eggs for the price of one.
I can see both sides of the discussion and still I am not unhappy with the XL. -
I also like Car Wash Mike's method, which is a straight cook without the foil. If I'm doing more that 3 racks, that's the one I'll go with. Good taste, consistent results, not a lot of futzing around.
My 2-1-1 method is a direct (albeit raised grid) cook using foil. It's a little fussier than doing a straight cook, but it gets them tender and tasty and off the Egg in 4 hours or less.
