Spatchcocked Chicken

I need some help. I did two or three Spatchcocked Chickens but I recently lost all my recipes and links to recipes when my #$@&* computer crashed. My wife wants me to cook a spatchcocked chicken tonight. Its 4 1/2 pounds and I don't have any of those little smoking pellets. I do have an assortment of woods and rubs. I would appreciate a crash course. Meanwhile, I will light the Egg and get her running. I may have a rum 'n coke along the way.[p]Thanks ahead of time.[p]Spring Chicken

    325 to 350°
    about 1 hour for a 4.5# yard bird
    Breast should be 180°
    Iffin ya got one use the raised grate and no need to flip.
    As for wood chips most any will be fine.

    Thanks. I just put that biddy on. I don't have a raised grill so I made sure the heat was stabilized at 325° and as low in the fire pit as possible. I figure it being so close to the heat I might need to tone it down a bit. Got me some pecan wood on to do the smoking and some Roasted Garlic Montreal Chicken seasoning to enhance the flavor.[p]This has got to be the easiest way in the world to cook chicken. And serve it too. Unless I forget all about it for three hours I figure it will turn out fine. My hat is off to whoever came up with the recipe.[p]Thanks again.[p]Spring Chicken

    Hope you had a good dinner. Heres the link for Naked Whizs page on spatchcoked chicken for future reference. We do ours on a raised grid at 350 for 1 hour, no flipping. Pecan is my favorite wood for chicken. It gives it a really pretty golden brown color, and a good mild taste too. Just did two birds couple days ago, one with Dizzy Pig Tsunami Spin, the other with Ken's Gilded Splinters, both were excellent. Tonights dinner was pancakes and breakfast links (cooked on the egg of course!).[p]~nikki

    Yes, mine was good and there's plenty of leftovers for tomorrow night. After I put the chicken on the grill I thought I would go to Google and check. Sure 'nuff, I ran right into the Naked Whiz's web site. I even re-read the stuff on why and how it got to be called Spatchcocked Chicken. He was very thorough. [p]Right now I'm trying to figure out if you made pancakes on the BGE or just the links. If you did... cool. I love breakfast and can eat it at every meal but life needs to be a bit more complicated than that. However, a BGE pancake does sound appealing. How'd you do it?[p]Thanks [p]Spring Chicken

    Just did the links on the grill, pancakes on the griddle inside the house. Kids also asked if we could do pancakes on the egg. I figure if ya had a griddle on it, or a skillet, or maybe even a stone, and the fire hot enough, it could be done. Would be an interesting experiment![p]~nikki

    nikkig,[p]Pancakes on the Egg are most doable (at least once). :)[p]This is one food that I prefer griddled over the little blue gas flame.[p]Puj

    Sorry I didn't get you the URL myself. I've been busy since my trip. I've got over 900 photos to rotate, adjust saturation, brightness, contrast, etc. and then build a website to weave it all into a story for all our relatives. I may finish someday and return to this forum! :-)[p]TNW

    I bet a non-sweet, herb, cornmeal pancake done on a cast iron griddle, on the Egg would be fantastic... I think I'll try it... Great idea..
