I'm trying my first ever brisket flat today. I had intended to take another shot at pizza, but my wife brought pizza home on Friday night so I decided to wait. Walking through BJ's yesterday and they had some decent looking flats at a good price, so decided to hold my nose and jump in! Using Elder Ward's brisket how to. I've got it nearly stabalized now at about 240 or so, hickory chunks for flavor. It was about 5 pounds and I expect it to take about 7 or 8 hours. Here's hoping!
