I have these by Consorzio Premax (Italian import). They work very well on poultry & lobsters. Thought I purchased them at William Sonoma but they're not in their catalogue. Perhaps they're available from another source...

I have good success with Messermeister take apart shears.

haven't used these, but was thinking about getting them after I broke a pair of sheers their first time out ona spatchcock. They look like they can handle the job.
