Never heard of spatchcocked chicken until I found this forum. It has quickly became a family favorite. I'm learn'n lots of ideas and variations from all of the posts. Keep on posting, pics always welcome. My pics aren't too good but good food and full belly. :) Thanks again, TNmike

    I hear ya. I had never heard of Spatchcocked chicken but decided to try it after seeing it here, and it is now one of my favs.

    I think the brisket will be the next unknown I will try.

    I also like the Spatched but I go to a real meat dept. where they have meat cutters and buy whole fryers and ask them to make split broilers with them. They put on the saw and cut in half with back still attached. Save me some knife work and they are ready to go. The back still attached helps keep the pieces together and adds flavor.
    So if you have a store that has meat cutters ask them to split those whole birds you are buying. Give it a try.
