Shoulder or Butt?

I know that there are many eggsperts on this forum that cook either personally or professionaly. I am asking their opinion as all others as to whether they perfer cooking butts or shoulders for pulled pork, and the reason they chose what they do. I have heard what they cook, but not the reason they chose the cut>

    Opinion's Please!,[p]A shoulder is 2 parts -- butt and a picnic.[p]Most prefer the butt for pulled pork but a picnic is good too.[p]Tim

    I prefer the butt first and a full shoulder cut second. Some people say the picnic can have a "ham" taste. I don't detect a ham taste the way I cook it, but on occassion have noticed a slight ham smell while the meat is still hot.[p]I also prefer boston butts with the bone in, as opposed to a boneless butt. The shoulder cut usually comes with the skin still on, and if you leave it on, the smoke doesn't penetrate the meat. Also, you don't get as much of the crusty outside that many people like. With a butt, almost the entire crusted surface can be used and may be mixed in with the juicy, tender inner meat that didn't have the benefit of the smoke. I like a little of both for pulled pork sandwiches.

    It is quite tasty, you've gotta try fried PP. BTW, I am getting excellent results on PP but injecting it with Jack Daniels... as you can see it came out extremly tender and juicy, nice mix of smokey pork and JD liquor..... now all I gotta do is make some JD pulled pork and turn it into tempura.
    And yeah..... Tempura ABT's are also another good one to try.

    Cornfed,[p]Gray hair worked for me, but I didn't get it until I was about 40. That was the last time I was carded too - 40 or 41. I said, "You'r kidding me, right"? "NO", was the reply. When I use to work in the liquor store, many years ago, I use to card ALL attractive women (I was single then) and they loved it. Guys never liked it as much.[p]Tim
