House of faulkner wings tech.on legs ets.

Made some of the House Of Faulkner wings and were great.The recipe in the first stage is to cover the wings in apple cider vinegar and bring to boil then simmer for ten minutes.Just wondering if any one has applied this technique to chicken thigh or legs?

    no but you are essentially par boiling the wings when you do that...some purists would say that's cheating.. but I've tried em and highly recommend em..and should work fine on any parts of the 'bird'..

    It added a totally different flavor to the meat.You add kosher salt and freshly ground black pepper to the liquid as I stated.

    It does not over power the chicken with a vinegar taste.Just enough that you know it is in there.
    He recommend lemon pepper that made it taste so good.I had a couple of bottles of lemon pepper around and then did a taste test against Shaking The Tree and you sure as hell now who won that battle.

    Kinda of what does vinegar do for sour beef and dumplings? But not as strong.

    I have to admit I'm not a big fan of the idea of par boiling but I did try this apple cider vinegar method two weeks ago. It rendereds most of the fat in the short boil and the skin was nice and crisp and meat was tender but not mushy. I thought they were great but many that tried them did not care for the strong vinegar taste. They were different. I would like to try again with 1/3 mix of apple cidar vinegar, water and apple juice. I think the texture was better than what I was getting before and worth trying again. The people who like vinegar flavor will love these. I also did not spritz with vinegar as directed. I just sprayed with apple juice.
    Just one of many new things to try.

    I also thought of using two thirds apple juice to one third apple cider vinegar.Spritzing I think is a must and just with apple juice.

    This is where the fun starts.We all try to make it better or to satisfy our own taste buds.I love it!!

    I agree, cutting the boiling mix would help make this more pleasing to the masses. I put apple juice in a spray bottle and hit the wings every 30-45 min. After smelling up the house with the vinegar boil I really thought it had enough vinegar.
    I really liked them fresh off the grill but I took some to work the next day and the videgar bite was very strong. I might use Frank's sauce next time as well.
    Lousiana hot has never been my first choice but everyone tastes things different.
