Rubbery Chicken Skin

This has probably been done 100 times, but I've been grilling chicken on the egg and the meat turns out the best, but the skin is always rubbery. What's the trick to cripy skin?[p]Wazoo

  • Wazoo,[p]Cook the chicken at a higher temperature. I cook chicken at around 350*. That usually gets the skin nice and crispy. [p]Another good trick is to use a vertical roasting stand. Place the chicken on it LEGS UP / BREAST DOWN. This will cause the fat from the dark meat to drip down over the breast, keeping the chicken moist. [p]Bill
