Hi Warren. I was doing a little studying of this method of cooking and reading your response to AZRP in the ROR website about safe cooking temperatures. The links you posted are no longer working and I can't find the time/temp tables in FSIS. I am interested in reading more. Thanks for your help, Mark

Thanks E. I printed and just finished reading. Very interesting, but a little light on technique and not a lot of help for home use. I don't think I'll be buying a sous-vide machine or a thermal circulator anytime soon! :laugh: Best regards, Mark
