I am guessing 11-12 hours at 250 dome temp, and cook to 185-200 internal temp. Check for tenderness at 185. If your test fails, try again at 190. Then again at 195. Until your polder or thermometer probe slides in and out with little resistance. Rest in foil for 30 minutes or longer. Enjoy![p]Beers
