flat iron steak

Any suggestions on the basics to cook a flat iron. I just picked one up at the grocery store and looking to fire up the egg now. Thanks, Pdub

That is my favorite cut of meat for doing on the Egg.Cook direct at sear temperatures (six hundred to seven hundred degrees) for two minutes per side.Let it rest for twenty minutes with the vents closed up on the egg till the dome temp is around four hundred degrees.Then cook to your desired temperature.Great stuff.

Forgot to mention marinade it the same way you would o a strip,T Bone or any other cut of steak and go to it.

Thanks, it was yummy, I brought it to 145 and let it rest some. I will definitely be looking for flat irons more often. They have such a great flavor.
