We like Vidalias on the Egg, but they need to be cooked indirect. The other day I picked up some silicone drink coasters to use on the patio. Since they are heat-resistant to 400 degrees, I used them for our latest Vidalia roast. No plate setter - no nothin' - just one coaster per Vidalia right on the grill. Worked great; there was a little leakage from the foil package and that cleaned up in a snap.

Kennyg turned me on to these years ago. I wrap them in foil and do the same thing. They are the flarebusters all the way at the bottom.
