Fajitas on skillet

Just cut the handle off an 11 inch iron skillet and fits the small just right.
Any of you use a skillet to do fajitas by skillet on high temps? Anything to look out for?
Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

    I have done fajitas, fish and shrimp on skillets in my large and small BGEs. I usually cook at 400 degrees direct with a raised grid if possible. If not just be careful of flashbacks when you open the Egg... :whistle:

    i have GrateMates. are you saying use the shorter or longer as raised grid?
