Help - The Butt's Done Early!

Hi there, [p]I have cooked many buts before. I have 10 pond picnic and a 8 pound butt. They normally take 15-20 hours. I'm having company over at 4:00 and it's 8:00am and they are done. They only took 12 hours![p]I have heard that some people put them on ice. Not sure why but would love any suggestions. I don't want to ruin these babies.[p]Thanks in adavance![p]

    Sean,[p]This was a mighty quick cook for a couple of butts. What's the internal temp? Early done butts will stay hot for hours if tightly wrapped in HD foil and stored in a dry ice chest covered with towels. We are talking almost 8 hours here before serving. A slow reheat will be required sometime this afternoon. Hopefully others will chime in with their solution.[p]K~G

    Sean,[p]I have heard others say they got a turbo-butt and they were done early, but I have never had it happen to me. I have not heard of icing them, I have wrapped them in a towel and placed in an ice chest (no ice) to stay warm. [p]Make sure they are really done - 195-205° in the meat and not next to the bones (which get hot). 12 hrs seems awful quick for 2 of them. What temps etc did you use?[p]Tim
  • Thanks guys. I had them steady between 225-250. I did creep up to 275 for a few hours while sleeping. I opened the vents a little to err on the high side versus an extinguished fire whih I have done before.[p]I have 6 hours to go before serving. The internal temps are 180-190. How long would you think I could keep them in there at 200 without drying them out?[p]Thanks again![p]Sean

    Sean,[p]180-190 - I kinda thought so! Set your dome temp to 210* and you can probably leave those butts in right up until serving time. They will not dry out. [p]K~G

    Sean,[p]Hard to say, but take them up to 200° internal -- you obviously have the time for it. It might take an hour or two and then allow to cool for an hour or two and you are pretty close to lunch time. [p]Tim

    Tim M,[p]Yes, indeed and good day as well! I was up early this morning with the anticipation of the Brown's season opener today. Plenty of time on my hands as the wife was still recovering from having fallen prey to the ravages of demon grape at a dinner party last night.[p]K~G
