and it is only half over...it started by having lunch with a few of the North Georgia Eggers..Bacchus, Smokey & Hungry Nephew..then I got home and tried Stuffed Tostito Scoops...(Fritos have never been my favorite so I altered the recipe)...I cooked them at 350 raised direct..I did them raised direct because the Tostitos are a little thinner than the Frito scoops...well in a word..AWESOME..this was definitely a hit with the family..I cooked them for about 25 minutes and 165 internal on the meat..
we didn't have any guacamole but that was ok

Looks great!!!! What type of pan do you have that pizza on?
-
Looks like you were busy. Is that pizza a deep dish? I'm trying to find a recipe for one, so if it is, do you mind sharing it with me? Even though I am trying to eat healthier meals, I think I could let let it slide one time after seeing your pic's.

Crawdad,
I have two of these so the pizzas can keep on coming...My wife puts the dough direct on the pan and then cuts the edges...I put this directly on the heated pizza stone..the bottom gets crispy as do the edges

Boxerpapa no it is a thin crust...we use Publix pizza dough.. -
Nice cooks, Kim, these stuffed corn chips have really taken the board by storm. I'm going to have to get caught up in the frenzy and make some soon.
-
Brad,
They really are good...it is like eating little mini Tacos...how can that be bad??? :woohoo: -
Stuffed chips, pizza & wings, does it get any better? Going to have to try those chips soon. Hubby LOVES fritos, so I think I will go for the original. Now I am really hungry! Greek leg of lamb just about to go on. Great looking cooks!
-
Regardless, deep or thin it still looks great. Thanks for your information.
-
Kim,
I never thought of pine nuts on pizza. How are they?

Little Steven,
We love pine nuts on our pizzas. I used to have them on my pizzas in Chicago when I was at Northwestern. :P
Try them sometime...I think you will like them... -
I don't know, but my cardiologist has upgraded his BMW since I started telling him about pig candy, fatties, etc. Think there's a correlation there?
-
Kim,
I love pine nuts. I've got a killer recipe for roasted garlic with goat cheese and sundried tomatoes with roasted pine nuts. I don't have it written down but I will first chance I get and send it to you. I serve it with Tuscan bread and you pull out the garlic buds, smear them on the bread and spoon the sauce over it.
