What to do with fresh sweet corn

Sweet corn is in season and really good right now. So I got a dozen ears and thought I'd make some tamales.
Cut off the kernels and mixed in 1 lb of Monterrey jack cheese then into the food processor with a stick of butter salt and baking powder.
Added enough corn flour to dry up the mix then rolled up the tamales with a strip of chile and a stick of Colby cheese, then steam for a couple hours.
Then let them cool and I'll probably freeze some of them. Most recipes call for sugar but these are really sweet without it.

That is different Randy I like the looks of them. I bet you can add just about anything to them also. Like some hot pepper strip.

Looks great. Our corn is still a few weeks away and I can't wait to get some. I've got a package of dried husks in the cupboard just dyin to become tamales.

I used the husks from the corn I shucked last batch, but these ears had husks that were way too narrow so I used dried. -RP

One thing I have noticed: You, stike, & thirdeye play at a different level than most of us(in my opinoin).

Not a different level, green corns are pretty much a southwest thing, if you ever tasted them. you'd be making them too. -RP
