Cooked a 7 lber ir 16 hrs. Dome temp averaged about 230. Pulled it off at a meat temp of 200. It was good, but seemed to be a bit dry. I have followed the same steps on prior cooks, but they were not as dry as this one was. Could it have been the meat or just one of those funny things?

Wardster, I have been finding some butts lately that seem to be less fatty than what I would like. The stores tend to think of it as desirable and charge a lot more per pound than for the more fatty ones. I have stopped paying more than $.99/lb because I find it is too lean. Maybe the same happened with you.
