Anyone cooked a 4lb flat brisket in 3 hours

If you want a good brisket, you are looking at a minimum of 7 or 8 hours for that chunk. Just not enough time to break that puppy down. I tried to do a 4 pounder on 6 hours once, and it still did not get through the plateau, and was very tough.[p]Anyone for steak??

We tried to do one in 3 hours before we knew any better. It was tougher than shoe leather, not even edible. I would suggest saving it for another time, and doing chicken or steaks tonight.[p]~nikki
