Corned beef--better to Egg or not?
Birdman
Posts: 66
I've been craving corned beef and picked up a pre-packaged 4 pounder today. I ordinarily slow cook in a crock pot, it in the oven, or on the stove with a dutch oven. What would be th pros & cons of cooking it on the Egg?[p]TIA

Birdman,
Slow cooked smoked corned beef is pastrami, I would say go for it.

Birdman,
I really like the following. Take the brisket out of the cryovac and rinse thoroughly. Dry and apply cracked pepper, as much as you can pat on. Meantime, fire up to 240 to 250º with lots of smoke. Cook direct for an hour, fat side up. Then turn and cook another hour fatside down. Finally, finish in the crockpot with just enough water to barely cover. The best of both worlds, and delicious.
I try to make enough for next day sammiches, but too often my family prevents that.
