I took a stab at a couple of nice slabs of beef ribs with a home-made soppin sauce.
I enjoyed them with an Earthquake Cab.

What kind of Cab and is that a drip pan below the ribs?

I cooked them 4 hours at 250 and went up to 300-325 for 1 hour. I mopped them roughly once or twice an hour with a modified mopping sauce I created with my own spice blend, Mitch's Oh Yeah!
I'll be happy to share the recipe, and the Oh Yeah can be substituted if you wish.

That is a drip pan below the ribs and the Cab was Earthquake Cab from Michael-David.

OK, I'm interested in more details. I've eaten good beef ribs (though that's been quite a while ago) but I've never cooked good beef ribs. Were these worth bragging about? If so, I want to know more! I can find my own cab.

Stanley, I know what you mean about beef ribs. They can be too fatty and not real tasty.
These were very good. Good enough that they didn't need any BBQ sauce at the end.
The trick is a real good mopping sauce and to cook them long and slow to make them tender and to render as much fat as possible.

Hello Mike and tjv.
I'm loving the flip ring and the flexibility it brings the grill. With the 2 grid set up, I can cook for 3 people or 20 with ease.
My only problem is trying to figure out which way to go at times... direct or indirect or any of the other options.
I'm finding I like direct with the grid raised as high as possible even for cooks that could go indirect.
