Chili Rubbed Skirt Steak Enchaladas

It took an extra day but we made the enchaladas tonight. Grilled up some green peppers, onions and a ancho pepper.

Rolled them up with the leftover chili rubbed skirt steak added some mexican cheese blend and enchalada sauce and refried beans and on to the egg

Cook for 30 minutes indirect at 350

We forgot to oil the pan so no plated shots but it was very good.

Hey Tom,
Those enchiladas look great. How much damage to the Le Creuset in the egg?
I'm thinking about dedicating one to use for that purpose.
