What is the 'downside' to wrapping a rib rack in foil?

    Ken,
    In my view you need some portion of your cooking time unwrapped to get the flavor from the smoke, wood chips, etc. Otherwise, with the rack wrapped in foil the BGE is only supplying heat; you could do this in your oven.

    If left in the foil to long or without a direct heat folowing they tend to get mushy..the direct hour after foil tends to firm them up and add some texture..HTH[p]Wess
