Chicken Enchiladas

Wanted to use up some stuff in the fridge. Best enchiladas I have ever made-
Grilled the Chix and veggies-

Diced it all up-

Rolled in Flour Tortillas, topped with a can of Salsa Verde and Pepper Jack cheese-

Baked for 30 minutes at 375-

Time to eat-

Of course the neighbors came by while they were cooling. Luckily there was enough left for lunch tommorrow.

I'm not a big fan of enchilada's, but I would be on those things like a Buzzard on a gut wagon.

I have a question...pardon me for snooping through your Eggfest pictures. I saw this picture of your cook station and heard about your using this small cast cooker, tell me what you used it for.

Smitty- Thats why I posted the pictures in the album in the first place-
I can't see your photo but I assume you are speaking of my little 5" hibatchi. It is basically like a salesmans sample size, functioning hibatchi. During Eggs by the Bay I put a piece of lump in it and used it as a warmer for a Roasted Garlic & Gorgonzola Dip I made. Here it is before I put the dip on-
And the roasting garlic just cause it looks good-
