fiver29,[p]What temp??? Red hot coals are one temp - HOT.

  • fiver29,
You want the coals to be red roaring hot. I basically did them just like a steak. (Did I just say something redundant?) I get the egg up to 750 degrees or however hot you can go, and then put the steaks on the coals, 2 minutes per side. After that, I put the grid in and do a dwell with the vents shut for however long you would normally dwell your steaks based upon thickness and doneness. That should be a good starting point. After that, you can adjust to suit your tastes. Good luck![p]TNW
