First - I'm a rookie.
I'm planning on cooking a couple of Boston Butts this weekend to make some pulled pork. How concerned do I have to be with the meat hanging out towards the outer edges of the grill grate (therefore, outside of the protection of the plate setters)? I have a large egg and I want to cook two at least a couple of butts. Also, any suggestions of an online source to buy a grill extender? Are these high enough to put butts underneath and on top of the extender?

You could fashion some foil towards the end of the grate. Should keep the direct heat off the butts.

I would not be all that concerned. Two butts will fit over the platesetter quite nicely.
Unless you plan on cooking more then 3 butts at a time the Grid Extender really isn't necessary; however, check out Egg Accessories or you can call BGE in Atlanta and have them ship you one of theirs
