Busy Cooking at the Ranch

We didn't go anywhere except Sam's Club, Lowe's and Target all weekend. So that gave us some time to heat some stuff on the Egg.
Yesterday we started out with Chicken Fricassee in a Dutch Oven. Two hours and as soon as it was finished I added 17# of Butts and cooked them for 21 hours. As soon as I took them off and placed in the box I threw on some Mar-a-Lago Turkey Burgers (Donald Trump's chef's recipe).

They did. Mostly John Henry Pecan but with some Bad Byron's Butt Rub and a light touch of Dizzy Pig something or other.
After I pulled it I also added a bit of salt and some more Bad Byron's to enhance the flavor. And I added some John Henry Honey BBQ Sauce to a couple of batches just for variety.
But the bark was nice.

That's probably it for a few days. One of the Butts was for my neighbor who just returned from a driving trip to the Grand Canyon and Las Vegas. There were 8 of them in the rental van. Yea, I know...
But I thought they may need some home cooking when they arrived back here.

Given the reports of tainted meat lately I'm beginning to think any kind of meat is questionable at best. But I'm reminded that our evolution was from eat'n bushes to eat'n meat. I certainly would not want to upset Mother Nature's game plan.

Did the Mar-a Lago Turkey Burgers on my Egg a few weeks ago (followed the recipe as provided by Oprah, so you know it had to be right
). They turned out tasty, but a little dry. How about your's? -

We were watching Oprah Wenfrey one day when it was just too hot to be outside. I was about half napping but she said something about a Turkey Burger and it kinda got my attention. You know, diet and all...
I started paying attention and it sounded like something that just might be good. So we downloaded the recipe and tried it.

It's certainly different but Spring Hen and a neighbor liked it. I suppose I could kick it up a notch or two and like it but I tried to stay with the recipe, except I cooked ours on the Egg. They used a gas grill on stage.
I could probably do without it from now on but you just never know where the next really great recipe is going to turn up.
Spring "Try Anything .289 Times" Chicken -
Mine were a little dry too in spite of the pear infusion. Kinda surprised. I gave up trying to enjoy it the way it was intended so I added extra mayo which helped some. Then I added some special mustard we ordered from Chicago. Definitely gave it a nice touch. Sort of a Dejon type mustard.
I'm also thinking it would cook better in a pan with some olive oil.
The Chutney added a unique flavor making me think this was way too far away from being a "hamburger." The name "burger" implies that it will be good. Maybe if it was called "patty" it would imply a different expectation. I'm also of the opinion that ground chicken would taste better than ground turkey.
Got three more "patties" to eat.

yea leah is on weight watchers now so i gotta try to find "better" things to eat......
i keep trying but can't quit "doing my thing" on the egg so this is something we could proabably all eat

Turkey, Burger, Mar-a-Lago, Oprah
Oprah found a new favorite food when she tried this turkey burger at Mar-a-Lago, Donald Trump's private club in Palm Beach. "I believe [it] may be the best turkey burger in the entire world," she says. The Mar-a-Lago Turkey Burger will be permanently available at the Trump Bar and Grille in Trump Tower in New York City, open to the public for lunch and dinner. It will also be served during lunch in Chicago at Sixteen, the Trump International Hotel restaurant.
1/4 cup scallions, thinly sliced
1/2 cup celery, finely chopped
3 Granny Smith apples, peeled and diced
1/8 cup canola oil
4 lbs ground turkey breast
2 Tbs salt
1 Tbs black pepper
2 tsp chipotle Tabasco™
1 lemon, juice and grated zest
1/2 bunch parsley, finely chopped
1/4 cup Major Grey's Chutney, pureed
1 Sauté the scallions, celery and apples in the canola oil until tender. Let cool.
2 Place the ground turkey in a large mixing bowl. Add sautéed items and the remaining ingredients. Shape into eight 8-ounce burgers. Refrigerate for 2 hours.
3 Season the turkey burgers with salt and pepper. Place on a preheated, lightly oiled grill. Grill each side for 7 minutes until meat is thoroughly cooked. Let sit for 5 minutes.
4 Serve with a side of Mar-a-Lago Pear Chutney and your favorite toasted bread, pita or hamburger roll.

Well, after meeting you in Ocala and reading about the med stuff here, I thought maybe you had taken a sabatical on the carne asada.

The way I understand the rules is that if you live big you need to eat big. Of course, you die big too but who's count'n?
So far, I haven't been able to ween myself off regular food. But I'm trying. Drink Coke Zero with my rum and only have two sausages or bacon with breakfast. Even then the bacon is turkey and sometime the sausage is.
No doubt some of my medical problems would be less if I was less. Know what I mean?
Only problem is "living" is different than "existing." I like "living."

I like the movie quote in "A walk in the clouds" the grandfather lover salt and chocolate and starts into a diatribe about how a doctor doesn't know what the soul of a man needs! My sould needs BBQ, now my waistline needs salad, but that is another story. -
Nice cooks, SC. We did some cajun stuff this weekend, too, as my sister and her family were in for a visit from Louisiana. Chicken and sausage gumbo, to be exact, but there was also plenty of cracklin and boudin as well. May have to try out the turkey burger recipe you did there.
Still working on getting out to the shack in October. Gotta figure out how to transport the SBGE out there without turning it into powder inside the car.

Don't worry too much about transporting your Egg here unless you really want to. We'll have quite a bit of stuff already cooked. That way I will have my large, small and mini Eggs for anyone wishing to cook something they found to be a real crowd pleaser.
Your weekend sounds interesting. Gumbo is always a great way to spend a weekend.
