Veal roast - need help

I just picked up a 3 lb. veal roast & have injected it with mojo & pinot grigio. Anyone have any idea what the internal temp of it should be, medium-rare? I'd hate to overcook something so delicate.... Thanks! JCA

    I should think it is the same as beef: 135 for rare, 145 medium. We cook the loin with ribs attached as a special dinner treat using those temps or about 1 hour at 350 for a 6-7 pounder. Have fun.
