I have mopped, injected at the beginning, and injected after the plateau. I experiment a lot with brisket.
I personally do not mop brisket as I don't think it is necessary or beneficial when cooking in the BGE. -
Since getting the egg I have stopped mopping. Use to do it often with the offset, just don't see a need with the egg.
