Comin at cha!...took Mike's starter on these baked beans and his encouragement to eggsperiment some and here's what we came up with...these were a huge hit at dinner..tried to keep Mike's spirit of sweet and added a lil kick...hope ya'll like 'em!..
Beans, Baked, Carwash Mike/Eggtucky
2 28oz can Bush's Baked beans original, drain and rinse in collander
1/8 cup Molasses
1/8 cup pure maple syrup
1/4 cup brown sugar
1 med vidalia onion diced
1 med or large jalapeno de-seed and de-veined, diced
1/2 lb hot or mild Italian sausage
2 TBSP Blues Hog Honey Mustard BBQ Sauce
8 oz KC Masterpiece, Hickory/Brown Sugar or Original
1 TBSP John Henry Pecan Rub
1 TBSP JH HOT Pecan Rub
5 slices bacon
Drain beans into collander and rinse several times to remove all the 'canned' gunk. Add beans to 3-5 qt DO or CI Skillet.
Fry bacon until firm but not crispy, break into large pieces, do not 'crush'. Add to beans.
Sautee diced onion and jalapeno in bacon grease until browned. Add onions, jalapenos, and any remaining bacon grease to beans.
Brown Italian sausage in skillet and drain grease. Let cool and add to beans.
Add molasses, maple syrup, brown sugar, Blues Hog Honey Mustard, KC Masterpiece, and JH Rubs. Stir.
Smoke indirect at 250-300 with cherry wood for 2-3 hrs. 2 hrs with lid off, one hour with lid on.
