Gettting more bark on my Butt

East Cobb Eggy

Cooked two butts now and everyone loves the bark.
Just wondering how I might get a little more bark on my butt.
Any ideas?

I had great bark on the two butts that I cooked yesterday. I think the success came from the dry rub that I coated them with. I wrapped them in plastic wrap and they sat in fridge for about 18 hours before placing on grill. Plus, I let them sit on counter a good hour before beginning cook. Good luck!

Also adding some turbinado sugar to your rub.

As long as there is no fat layer on the butt and you don't foil it too long, you should have the entire butt covered with bark. I rub, slather w/mustard, and then rub again. It'll look like a meteorite.(And it won't be shy)

Hmmm.... I might have to try that next time.

Very good.
I have the "Sugar in the Raw". I might have to do that next time.
Thanks for the advice.

Big'un,
Thanks for the advice.
I was thinking that next time, I will add time to my unfoil and subtract the same amount of time from the foiled cook.
Greg -
Just keep in mind that the foil time cooks slightly faster than unfoiled. BTW, I have never foiled a butt or a picnic and I always huge amounts of bark. HTH.

Big'un, thanks for the advice.

Add more turbinado sugar to your rub.

I didn't foil these at all.....just 13 hours at 250 dome
-
I guess I need to try one of these 13 hour cooks.
Are you using a DigiQ??
Greg -
Didn't foil at all...
Couldn't have had more bark...
I prep like most above, but right before I put on the egg, I fully rub Dark Brown Sugar over the entire butt.
Came out like this... -
Cook four butts... ;-)
