I have 17lbs of tri tips for a family blowout on Sat,going to use montreal seasoning, dizzy dust, maybe some Marrow Bay Rich's,trickery,going to cook direct at 400, until internal of 135, then reverse sear, how long can i keep them in a hot cooler????? cooler will be solar heated,expected hi of 105, tia.
