Pulled chicken is typically done with dark meat only, the breast dries out before it is pullable. Cook it to 200 internal temp and it will pull just fine. -RP

Just got back from the store with eight leg quarters for Saturday dinner with the neighbors.I do mine indirect at 275 degrees, couple of chunks of hickory. Around 3 hours, maybe a little longer if the quarters are huge. Take off when they are at least 190 internal.

I do it exactly like Slick when I'm doing pulled chicken for my Tortilla Soup. Good luck!

I do beer but style then pull. I marinate in a mojo for 2-3 days. Way yummy!
