once you get your fire established (and you want to 'sneak" up on 220) your bottom vent should be open about the width of a credit card and the daisy wheel should just be open a scosh. ..
now. ..here is a very important tip. .. every egg acts a little differently. . . some eggs are perfectly happy to ride along all night long at 220. . . some aren't ... i have one large egg that is pretty good about sitting at 225 dome temp. . .but i have one egg that just won't do it, even with a guru. ..it is much much happier at 250 dome temp. .. SO DON"T FIGHT IT!!!!. .go with what your egg is happy with. . . if your egg settles in at 240, and wants to stay there, then let it stay there ... that is still LO AND SLO and your brisket will still cook perfectly. ...and all this will happen with those vents in the positions i talked about. .. .
be at one with your egg :woohoo: -
Thanks. Is a "scosh" around an inch or is it less? And I guess the width of a credit card is about 2 1/2 inches.
-
Kinda like, "be the ball Danny"? :woohoo: Have a good 4th Max.

NO NO ..the width of the credit card is like a 16th of an inch!!! . . .geez, if you leave the bottom vent open 2 1/2 inches, your temp will be up around 600 degrees. . .
and a scosh is about the same as a C$%T hair!! . . if you get my drift  to get low and slow temps, and not snuff your fire out requires some very sensitive fine tuning of your vents. ... typically, once you get fire going, set that lower vent, and then fine tune with your daisy wheel .. .i would strongly recommend that for your first low and slow, that you get your self out of bed every 60 to 90 minutes to check on the egg to make sure things keep running smoothly all night long. . ..just to be safe. .. -
LOL. ...you too mike!!!

Is "scosh" Yiddish or Hebrew??
Is a smidgin the same as a scosh?? -
and to think i thought it was a celtic word
-
Well googling the word brought up an interesting variation on the word HAHAHA
Maybe scosh is Scot Celt. You know they talk funny!!! -
Scosh might be a jot or tiddle in Hebrew :woohoo: It is late and I'm not the most fluent person in Hebrew...... but I live down the road from a Holiday Inn Express and I have a book on Hebrew
I've always wondered what "ferclempt" meant. :woohoo: -
I can honestly say I never wondered!!

Scosh is Japanese. Similar to smidgin, nitnoi, and so on.
