Just Another Andouille Cook

Have posted previous about using andouille in dishes.. got home tonight and had andouille, but not all of my usual ingredients...still pretty good..andouille rubbed in evoo and DP Red Eye Express, marinaded shrimp, vidalia onions, jalapeno, and fresh squash rolled in evoo, s&p, and JH Raspberry Chipotle, all with fresh egged corn on the cob and a slice of fresh 'mater...

Oh damn man, that looks great. I miss the Anouille and Boudin of my childhoon in LA. We get some decent renditions from "across the border" (TX/LA that is) and I will definately try your combo there...

No extra liquids required!..although..I did give serious consideration to pouring a lil beer or bourbon into it but the wiffie started whinin not to!! :blink:

Thanks Austin...yeah I have a butcher here that gets it fresh from LA and it's as good as any I ever had when I used to visit 'arcadia' on business..my usual mix has no squash, but I didn't have any peppers
..usually add a lil diced habanero, some sliced pablano, green, and red peppers along with the onions..it was good with the fresh squash, but not as good as the all peppers version..

Thanks JL, I forgot to mention I egg the andouille first with the Red Eye express on it then after it cools I bias cut it and add to the onions/peppers/whatever mix after glazing them a bit in the skillet..
