Another Mr. Toad's Pork Loin question

I picked up my pork loin today, 6 3/4 lb. by 18 inches long. Got the bag of mixed dried fruit and preserves but still need to pick up the nuts.
I will give some of the cooked loin to my neighbor and will keep some for myself, should I cook the whole thing??? Can I freeze the leftovers if I have too much??? I was thinking of maybe cutting it in half. (two 9 inch pieces, then spiral cutting it, add the filling and rolling it back up)
Any thoughts???

    You can cut it up how you wish. Some do it with tenderloins. Left overs are great too. The last time I did it, I spiraled it, as your thinking of doing. It is easier to cut it like a club sandwhich though, in my opinion.

    I will put it in the freezer for awhile to firm it up so that I can "try" to spiral cut it. I may just cut the two ends off leaving a more uniform piece of meat. I can always use the end for something.
