Not BBQ, but Bruschetta!

This is s recipe given to us by some friends - good stuff! With this being tomato season, the following Bruschetta recipe might come in handy. I made it yesterday and it was a hit![p]2 lbs plum tomatoes or 3-4 regular tomatoes seeded and diced small
1 cup diced red onion
6 scallions, diced
1/2 Cup shredded basil or 2 tbl dries
1/3 Cup Olive Oil
2 tbl Red Wine Vinegar
1 tsp salt
1 tsp pepper
1 clove minced garlic
1/4 tsp Tabasco
Mix all ingredients and chill for 3 hours[p]Serve with garlic Bagel chips, French bread or toasted garlic French bread slices. [p]Life is GOOD! :~}[p]

    Gfw,[p]Try a little less olive oil and DON'T chill, just cover and leave at room temp for about three hours. You'll be amazed at the difference in taste. If you really want a treat, sprinkle the tops of the bruschetta slices with some asiago cheese. Yum.
